CHOCOLATE ZUCCHINI CAKE

Cup Oil 1 tsp. Soda
Cup Margarine or Butter tsp. Baking Powder
1-3/4 Cups Sugar tsp. Salt
2 Eggs (beaten) 4 Tbsp. Cocoa (or more)
1 tsp. Vanilla 1 tsp. Cinnamon
Cup Sour Milk (or sour cream)

2 Cups grated Zucchini with rind
2-1/2 Cups Flour

Cream oil and margarine with sugar.
Add beaten eggs, vanilla and sour milk.
Stir in dry ingredients.
Stir in Zucchini.
Put in a greased, floured BIG PAN. Sprinkle with (optional):
Cup chopped Nuts
Cup Chocolate Chips

Bake at 325 - 350 for 60 minutes.
