STUFFED MUSHROOMS

BIG Mushrooms

Shallots / green onions

Salt & Pepper (to taste)

Cheese (Mozzarella, Cheddar or Swiss) -for topping

 

 

Clean mushrooms with a paper towel, or mushroom brush.

Remove stems and the "inside" of mushroom - Set aside in a small bowl.

 

Place mushroom "shells" on a baking sheet.

 

Cut up shallots, mushroom stems and the mushroom "guts", into  small pieces, approx. 1/8" or 1/16" - the smaller, the better.

Add salt and pepper.

 

Put this "mixture" into the mushroom "shells".

 

Top with shredded mozzarella cheese or cheddar cheese,

or slices of Swiss cheese.

 

Cook in oven (350 degrees), until the cheese melts, approx. 15 minutes.
